Fast and Delicious Beef Stir-Fry
When I am looking for something quick and easy, that I know the whole family will love, I whip up a stir-fry. You can use any beef, pork, or chicken in this recipe and for a vegetarian option, use black beans or white beans. Beef Stir-fry, Rice Noodles and Broiled Tomatoes
Game Plan
Marinate the beef. Set aside until ready to stir-fry. Julienne the vegetables for the stir-fry. Prepare the tomatoes and set aside. While the noodles cook, stir-fry your meal in a large skillet or wok and broil the tomatoes for 5 minutes. All should be ready at the same time.
Beef Stir-fry
Ingredients
Rice noodles ½ lb, Round steak 1 lb lean, Soy sauce 1/4 cup, Water 1/4 cup, Honey 2 tsp, Garlic 2 tsp minced, Ginger 1/2 tsp minced, Worcestershire sauce 1 tbsp, Canola oil 1 tbsp, Onion 1/2, Carrots 2, Broccoli 1/2 head, Mushrooms 1 cup.
Directions
Trim the steak and slice it into ¼-inch strips. Set aside. Combine the soy sauce, water, honey, garlic, ginger and Worcestershire in a shallow bowl. Place the steak in the bowl and let stand for 15 minutes while you prepare the vegetables. Julienne the onion and carrots and separate the broccoli into florets. Cook the rice noodles according to package directions. Drain the meat from the marinade Heat the oil in a wok or large skillet over medium-high heat until hot.. Keep the juices from the marinade and put the steak into the wok. Stir-fry for 4 minutes until the meat is browned. Remove the meat from the wok and set aside. Add the onion, carrots, broccoli and mushrooms to the wok and stir-fry for 3 or 4 minutes until the veggies are tender but still crunchy. Return the meat and the marinade to the wok and heat through. Serve over thin rice noodles.
Broiled Tomatoes
Halve 4 large tomatoes. Combine 2 tbsp breadcrumbs, 1 tsp thyme, 2 Tbsp grated Parmesan cheese and 1 tsp of oregano in a bowl. Sprinkle over tomatoes. Broil tomatoes for 5 minutes until golden.
