Vegetarian Chili


The Ultimate Comfort Food for Meatless Mondays

Canola oil 1 tbsp, Garlic 2 tbsp minced, Onion 1 chopped, Celery 2 stalks chopped, Carrots 2 chopped, Green pepper 1 chopped, Sweet potatoes 3 finely diced, Mushrooms 1 cup sliced, Tomatoes 28 oz can diced, Black turtle beans 19 oz can, Kidney beans 2 x19 oz cans, Frozen corn 1 cup, Vinegar 1 tbsp, Chili powder 1/4 cup (we like it very spicy, adjust for your family’s taste) , Cumin, Oregano, Cayenne

Prepare the vegetables. Heat the oil in a large saucepan and sauté the garlic, onion, celery, carrots, green pepper and sweet potatoes for 5 minutes. Drain and rinse the beans. Add beans and the remaining ingredients to the saucepan and simmer for another 20 minutes, stirring occasionally.
