Here’s a lovely sweet that’s impressive and easy to serve on Valentine’s day or to guests anytime. It is from the 2008 Family Organizer and has often been requested by our customers over the years. Enjoy!
Preheat oven to 450 degrees F. Line 8 cups of a muffin tin with X-large paper liners.
Spray with cooking oil. Melt 1 cup unsalted butter and 1 1/3 cups semi-sweet chocolate chips in a double boiler. With an electric mixer, beat in 5 eggs, 1/2 cup sugar and a pinch of salt. Beat egg mixture with chocolate mixture and 4 tsp flour.
Pour into muffin cups. Bake 8-10 mins, centre will not be completely set. Let cool. Remove cakes from the paper liners and transfer to dessert plates. In a small bowl, sprinkle 1 pint of strawberries with sugar to coat. Top each cake with whipped cream and sugared raspberries.
