Morning Glory Muffins Recipe
Make these for breakfast-on-the-go or a perfect after-school snack
from the More Time Moms Family Meals Cookbook.
Preheat oven to 350 degrees F.
In a large bowl, combine:
3 eggs,
3/4 C brown sugar,
1/2 C canola oil,
3/4 C apple juice,
4 grated carrots,
1/2 C coconut flakes,
1/2 C raisins or dark chocolate chips
and 3 tsp vanilla.
In a medium bowl, combine:
1 C flour,
1 C whole wheat flour,
1 Tbsp baking powder,
1 tsp baking soda, 1 tsp cinnamon,
1 tsp nutmeg,
1/2 C walnuts.
Fold dry ingredients into wet ingredients and mix for 10 strokes. Spoon into greased muffin tin. Bake for 25-30 mins. Makes 12 large muffins.
